SAMPLE RECIPE
TEQUILA CAKE
Preheat oven to 325 degrees

2 cups SUGAR
3 tsp. BAKING POWDER
1 cup BUTTER
1/4 tsp SALT
4 EGGS, lightly beaten
1/4 cup TEQUILA
1 cup MILK
3 1/2 cups ALL PURPOSE FLOUR

Cream sugar butter and eggs together. Stir in milk, then add the flour, baking powder, and salt and beat. Add the tequila and beat until smooth. The secret of this cake is to beat the batter very well until it becomes shiny.

Fold the batter into a greased and floured bundt pan. Bake for 1 hour in a 325 degree oven or untl done when a toothpick inserted in the cake comes out clean. Cool cake on wire rack, then remiove cake from pan, place on cake server or plate and top with the following "TEQUILA CAKE GLAZE."

TEQUILA CAKE GLAZE:

1 cup LIGHT BROWN SUGAR
pinch SALT
1 cup DARK BROWN SUGAR
1/4 cup TEQUILA
1bIace the sugars, water and salt in a saucepan and bring to a boil. Continue to cook until the mixture becomes semi-carmelized. Remove from heat, stir in the tequila and Grand Marnier and pour over the cake while glaze is still warm. ENJOY!!

The author, Lynn Nusom, offered this additional bit of information ---- With leftover cake (if you have any), slice into 1/2 inch slices and use instead of bread for making french toast! It's absolutely wonderful.
