SAMPLE RECIPE Gourmet Apple Pie | Unbaked 9" PIE SHELL
1 Tbsp. DRY BREAD CRUMBS
1 Tbsp. chopped, toasted ALMONDS
5 cups peeled, sliced APPLES
1 EGG
1 EGG YOLK
1 cup HEAVY CREAM
1/2 cup SUGAR
1/4 tsp. CINNAMON
1/8 tsp. ground NUTMEG
1 1/2 Tbsp. melted BUTTER or MARGARINE
3 Tbsp. SUGAR
Sprinkle bread crumbs and almonds in pie shell. Arrange apples in pie shell but don't heap apples. Bake in 350° oven five minutes. Combine egg and extra yolk. Beat slightly. Blend in cream, sugar, cinnamon and nutmeg. Pour half of this cream mixture over the apples. Continue baking for 30 minutes or until custard is firm. Pour remaining cream mixture over all. Bake 30 or more minutes or until knife inserted near the edge comes out clean. Remove from oven. Pour melted butter over the top and sprinkle with 3 tablespoons sugar. Return to oven long enough to glaze topping, about eight minutes. Cool before cutting.
Makes six to eight servings. |
